Besides the fact that it is delicious, it’s also made from ingredients that are easy to obtain at an affordable price. It also happens to be a very easy meal to make. Sure, there are a couple of components involved, but you don’t need to be a trained chef to execute its making.
Here is an easy peasy recipe from Divine Caterers that anybody can try.
6 large potatoes
2 cups of maize. Some people prefer using githeri
2 cups of green peas
Some soft pumpkin leaves. A bunch will do. Spinach or other greens will do.
One diced onion.
Optional 50g serving of butter or margarine
Salt to taste
Fry the onions in a cooking pot until golden brown.
Add the potatoes and salt and add some water and boil until the potatoes have softened.
Once the potatoes have softened, add the maize, peas and greens in the pot.
Cover the pot with a lid and let it cook over medium heat for about 40 minutes.
Remove from heat and drain the excess water. Add the optional butter ath this stage.
Take a wooden spoon and mash the mixture
Add seasoning if desired
Serve with your favorite stew and enjoy.
